You can also do it with out killing the tree by drilling a core sample from it. A narrow hollow auger is screwed into the tree until it reaches the center. Then it is pulled out and a long tube of wood comes out with it. Kinda like core samples from the earth only on a smaller scale.

i'm no expert but AFAIK, there's a tool they use to find out how old a tree is without having to cut it down.
