i have a recipe for liempo a bit similar to balamban or cebu style liempo.
ing.
1.5 kilo pork belly/ it could be smaller or larger depending on how many you feed.
For the Brine.
1/2 cup rock salt or sea salt ayaw gyud iodize or fine salt if you really can't get sea salt and only have iodized you can use 1/4 cup instead of 1/2 cup.
3 liters water
1 teaspoon ground black pepper
1 tablespoon sugar.
1 stalk crushed lemon grass
4 cloves crushed garlic
Aromatic filling.
1 large bundle spring onions
2 stalks lemon grass
3 cloves garlic
1/4 teaspoon black pepper
pinch chilli pepper
salt
Brush solution:
3 tablespoon oil
1 tablespoon soy sauce.
Procedure:
1. make an incision in your pork belly right in the middle of the fat and meat making a pocket for your herbs and spices.
2. combine all ingredients on the brine solution. and marinate your pork in the brine for a minimum of 1 hour. the longer you stay the pork on the brine the saltier it gets so it depends sa imo kung unsa ka parat imong liempo. i find 3 hours is fine.
3. after brining wash the pork belly in cold water and pat dry
4. chop and combine all the aromatic herbs and spices. and put it inside the belly that you made an incision.
5. spit roast it in an open fire or use a turbo broiler at very high MAX for 45 mins SKIN SIDE UP!!! now let's be realistic, cooking it in the turbo broiler may not have the same results, but still you can get that crispy crackling skin just don't forget to baste or brush it with oil and a little soy every now and then.

no problem. just be very careful with the brine. if you find it very salty you can reduce the amount of salt or just add more water or marinate the pork shorter.
don't expect to get it the first time. trial and error lng.
