medium-rare ang akong instructions....basta fine-dining nga restaurants, they usually let the meat rest before serving. So ang medium-rare will become medium by the time it is served because it will still continue cooking after it has been taken out from the pan, grille or broiler oven.....with budget restaurants who usually don't let the meat rest, I just tell them medium -rare and then have it served in a sizzling plate without the gravy....ipa-butang nako ang gravy on a small saucer.
