all you need
chocolate blocks---be it milk chocs,premium chocs,sweet dark chocs
double broiler
molder
extender----like nuts, rice crispies,mallows,raisins,sprinkles
>chops chocs para easy to melt n double broiler but dnt let water boil for nice consistency
then pour to molder,let it cool till it sets and then unmold and pack.
what about truffles or pralines? who knows how to make them?
chocolate truffles
225 grams chocolate. ayaw nang generic nga chocolate bar nga tag 70 petot ang bar.
invest in a much better quality. try valhrona kung d kaya sa budget any high quality Couverture chocolate is ok would suffice.
puratos brand is not too expensive. remember. buying a low cost ingredient would reflect on the taste of your end product.
160 ml heavy cream.
if you cant find heavy cream add 15 to 30 grams unsalted butter to the cream
that would help stop your heart from pumping. hehehe
30 grams unsalted butter.
1. chop chocolate and melt in a double boiler. DAPAT DILI GYUD MA IGO UG TUBIG!!!! ang chocolate.
if you dont know what a double boiler is and how to use it just google. it.
2. heat and melt the butter and cream
3. once chcoclate is melted combine all ingredients. add any flavoring you want. liqueur etc...
4. refrigerate the mixture.
5. mold into desired shapes dust with cocoa powder or powdered sugar.
6. serve.
PRALINE.
murag ra ka ug buhat ug peanut brittle.
the chocolate praline i forgot how much chocolate to put in the recipe.
Recipe for praline.
200 grams white sugar
70 grams brown sugar
100 grams cream
100 grams butter
1 and a half cup almonds.or pecans lightly roasted.
procedures.
roast the nuts in a large pan. or oven. you will know it is nicely roasted if you can smell the nuts.
DO NOT BURN. PLEASE.
combine cream butter and sugar in a sauce pan let it boil,once it starts to boil reduce heat.
stir until thick and made into a caramel or it's in the soft ball stage. around 235 f or 112 c it pays if you buy a candy termometer. be patient.
be very careful to watch over the mixture kay dali ra sya masunog kung makalimtan nimo.
and never ever try to taste hot boiling sugar. mas init pa na sa gi lanay nga plastic ang feeling. Sakit kaayo kay nag tinanga ko tung una i hope you wont make the same mistake as i did. hehehe
stir in the roasted or toasted nuts. mold or spoon into desired shape and let it cool on a greased wax paper.
thats it very simple.
