Easy Cake Mix Coffee Cake (Also Known As Breakfast Cake)

Directions


  1. Beat together first four ingredients. Then add eggs one at a time - ( but beat less than two minutes).
  2. Pour 1/2 batter in a 9x13 pan or Bundt pan and pour 3/4 of the filling on top. Pour remaining batter over filling. Sprinkle remaining filling on top (not too much though as the sugar can burn).
  3. Bake at 350°F for 55 minutes (usually not this long).
  4. Glaze-----Heat glaze ingredients until near boiling and glaze while cake is still warm from oven.


Amazing Solan Family Chocolate Cake (Aka 3-Hole Cake)




Ingredients



Mocha Glaze


  • 1/2 cup powdered sugar (optional)
  • 2 tablespoons baking cocoa (optional)
  • 1/2 teaspoon decaf instant coffee (optional)
  • 1-1 1/2 tablespoon milk, of choice (works with regular, soy or rice or whatever) (optional)
  • 1/4 teaspoon almond extract (I usually use almond, but have tried & like coconut, orig. glaze recipe calls for peppermint) (optional)

Directions


  1. Instructions for Cake:.
  2. Mix dry ingredients together in large bowl.
  3. Mix wet ingredients together in separate bowl.
  4. Add wet to dry a little at a time, stirring as you add.
  5. Pour batter into WELL-GREASED bundt cake pan (well-greased is key--this is a sticky cake; I use Pam with great results), bake at 350 for 35-40 minute.
  6. Serving suggestions: with fresh whipped cream& strawberries, or drizzle with warm caramel or Kahlua, or glaze with mocha glaze (or some combo thereof!).
  7. Instructions for Glaze:.
  8. Mix dry ingredients together in bowl.
  9. Dissolve coffee in 1 tablespoon of milk; add extract.
  10. Whisk coffee liquid into dry ingredients; whisk until all blended and if needed, add 1/2 tablespoon more milk.
  11. USE GLAZE IMMEDIATELY OVER CAKE. It will harden quickly.


Banana, Carrot & Pineapple Cake Aka Sunshine Cake

Directions


  1. Preheat the oven to 180'C.
  2. For the cake, line a 20cm cake tin, or for a loaf, line a large loaf tin.
  3. In a large bowl beat the eggs, sugar and lemon zest together until creamy.
  4. Slowly add the oil while beating continuously.
  5. Sift the flour, salt, and baking powder together and stir into the creamed mixture.
  6. Fold in the banana, carrot, pineapple and chopped nuts until incorporated.
  7. Spoon mix into prepared tin and bake for 55-60mins or until firm to the touch.
  8. Remove from the oven and allow to sit for 10 mins before turning out onto a cooling rack.
  9. Allow to cool and if a cake, ice and keep in an airtight container, or, if a loaf, wrap in plastic wrap to store, or place in an airtight container. Serve the loaf either plain or buttered.
  10. ICING:.
  11. In a medium bowl beat the cream cheese, icing sugar, lemon zest and juice until smooth.
  12. Spread over the cooled cake and decorate with pecan or walnut pieces.
