pardon for my naivete but why there should be an advance order of the the viet spring rolls?
This is something new to me though being that I've tried fusion of Malay, Thai, Viet in one...

one of the main ingredients of Vietnamese spring roll is fresh lettuce and fresh thai basil and/or mint so they can't really stock up on those stuffs because they need to be fresh and I doubt that they get orders for the VSP frequently that's why they really need to control buying the ingredients for that meal to avoid wastage. That means the only way to ensure your VSP's freshness and avoiding wasting fresh ingredients is for customers to order in advance.
