• Concocting some Apple Magic


      Life's simple pleasures include moments that warm you up, especially your tummy. The recipe below is a revised version of what I found from the food network site. I love to whip something up in the kitchen. I browse through recipes and customize it according to what is available or according to the taste of my kids.

      Cooking and baking is like making magic, conjuring and concocting potions, brews and spells. The smell that fills the room whenever I make magic in the kitchen always makes me smile and makes me think of what the kids will say when they take a bite. My youngest is always keen whenever an aroma of something new and something good permeates the house. He would quickly come down and ask me what I am up to.


      Last night's indulgence was an apple pie. You might wanna try this out.

      Filling:


      5 granny smith apples or 2 big fuji apples - cored & diced (optional - peel)
      1/4 cup finely chopped nuts (pecans/walnuts) - if you do not like nuts, you can omit this
      3 tablespoons all purpose flour
      1/2 cup brown sugar
      2 tablespoons Maple syrup
      1 tablespoon Lemon or calamansi
      1 teaspoon cinnamon

      - combine everything

      Topping:
      6 tablespoons Butter, diced
      3/4 cup all purpose Flour
      1/3 cup brown sugar
      1/4 teaspoon Cinnamon
      1/4 teaspoon salt
      1/4 cup coarsely chopped nuts (pecans or walnuts)

      - combine everything until crumbly

      Base (optional)





      ramekin



      - small whole wheat tortilla (quartered)
      - open one of the quartered tortilla, make sure not to tear the edges when opening.
      - put the tortilla in a ramekin or cupcake pan.

      Directions:
      Preheat the oven to 350 degrees celsius
      - pour the filling on top of the tortilla or pour it directly into the ramekin or cupcake pan
      - sprinkle the crumbly topping
      - bake for 30 minutes
      - cool for 10 minutes
      - serve with vanilla ice cream on top & drizzle with your choice of syrup (chocolate or strawberry).

      - serves 8

      Note: This can go so fast like the blink of an eye. 8 is not enough for us, most especially when my sister comes around. She brings home 2 or 3. Hope you enjoy making this recipe as much as I did.

        total cost is less than a thousand pesos, depending on what you get like how many apples in a pack, 2 fuji apples is around P50. a small pack of flour is around P50. Only the apples will be consumed, the rest of the ingredients can be used for some other recipes.

        cost per serving is roughly around P30.
