Cooking and baking is like making magic, conjuring and concocting potions, brews and spells. The smell that fills the room whenever I make magic in the kitchen always makes me smile and makes me think of what the kids will say when they take a bite. My youngest is always keen whenever an aroma of something new and something good permeates the house. He would quickly come down and ask me what I am up to.
Last night's indulgence was an apple pie. You might wanna try this out.
Filling:
5 granny smith apples or 2 big fuji apples - cored & diced (optional - peel)
1/4 cup finely chopped nuts (pecans/walnuts) - if you do not like nuts, you can omit this
3 tablespoons all purpose flour
1/2 cup brown sugar
2 tablespoons Maple syrup
1 tablespoon Lemon or calamansi
1 teaspoon cinnamon
- combine everything
Topping:
6 tablespoons Butter, diced
3/4 cup all purpose Flour
1/3 cup brown sugar
1/4 teaspoon Cinnamon
1/4 teaspoon salt
1/4 cup coarsely chopped nuts (pecans or walnuts)
- combine everything until crumbly
Base (optional)
- small whole wheat tortilla (quartered)
- open one of the quartered tortilla, make sure not to tear the edges when opening.
- put the tortilla in a ramekin or cupcake pan.
Directions:
Preheat the oven to 350 degrees celsius
- pour the filling on top of the tortilla or pour it directly into the ramekin or cupcake pan
- sprinkle the crumbly topping
- bake for 30 minutes
- cool for 10 minutes
- serve with vanilla ice cream on top & drizzle with your choice of syrup (chocolate or strawberry).
- serves 8
Note: This can go so fast like the blink of an eye. 8 is not enough for us, most especially when my sister comes around. She brings home 2 or 3. Hope you enjoy making this recipe as much as I did.
