Last April 21, Thursday, an exclusive dinner was held with the celebrated winemaker, himself, as he presented his signature creations that complemented Chef Paolo Pelosi’s exquisite seafood masterpieces at Cowrie Cove.
Jolivet’s wine craftsmanship dates back to 1982, and his creations have since been praised as the “Great Wines of the Loire Valley”. He is particularly known for his practice of natural fermentation that gives his wines a distinct aromatic flavor – consequently earning the brand a place among the “Top 100 Best Wines of the Year” by Wine Spectator.
Jumbo Prawn Confit and Strawberry Salad, Coriander-Scented Tomato Cocktail
The wine dinner at Cowrie Cove began with a serving of Attitude Sauvignon Blanc, notably the epitome of Jolivet’s style of wines, for its international appeal. Its citrusy flavors make it a pleasant complement to the first course, Sautéed Scallop with Lobster Tartare. It was followed by Sancerre Blanc, a wine marked by richness and smoothness – a compelling match with the Prawn Confit and Strawberry Salad. Then for a light tang, the rich Pouilly Fumé otherwise known as Blanc Fumé, paired with the Roasted Salmon on Vanilla-scented White Radish Purée is simply exquisite. The dinner culminated with a luscious serving of Chef Paolo's Cheesecake and Ovenbaked Pear and a glass of the Attitude Pinot Noir.
