Take your pick of ramen
“A great bowl of ramen is all about the ‘umami’. Achieving that takes a great deal of effort - from the natural ingredients, to the no-shortcuts preparations. When we first tasted Tashiro-san’s ramen in Tokyo, Japan, it was a most memorable experience that sparked emotions. We knew we needed to share this experience with Filipinos. We are now on our third year in the business and Yushoken Cebu is only our third branch. Cebuanos have increasingly become discerning when it comes to dining and since we opened a branch here, we have been overwhelmed by and are grateful for the amazing response of the Cebuanos who patiently line up day and night and have become regulars," shares proprietor and restaurateur Elbert Cuenca.
So (ra)men-y reasons to be happy
Yushoken delights the taste buds with over 20 kinds of “New Age Tokyo Style” ramen, a combination of two methods with a contemporary twist. The restaurant specializes in tonkotsu, or pork bone broth, boiled for 12 hours. A selection of four different soup bases or taré allows a blend of delectable flavors according to preference from the delicate Shio (salt-based) and Miso (soy bean paste base) to the full-bodied Shoyu (soy sauce-based) and Tantanmen (sesame paste with chili oil and ground pork). It also serves Tsukomen, dipping ramen and Hiyashi Chuka, cold ramen. Other favorites are its gyoza, aji tamago, chahan and karaage or fried boneless chicken. For the adventurous, order something off-menu by asking the servers what's on the 'secret menu'.
