Señor Kimchi is the brainchild of Kimberley Dakay. Kimberley got exposed to this type of fusion cuisine when she lived in California a few years back. Asian Mexican fusion started out as a Southern California phenomenon and she was truly captured by the flavourful combination of Korean-Mexican dishes. Her fascination didn’t just end there but instead, became an inspiration for her to go to culinary school to learn and to explore on the idea. Kim took formal lessons from the Academy for International Culinary Arts (AICA) and brought out the idea during the school's hell week. The outcome gave her a boost of confidence which encouraged her to pursue the dream. Kim's exploration included brainstorming and working with different chefs from the West, who specializes in this kind of cuisine. The result - Señor Kimchi was born.
