COCONUT MACAROONSOriginally Posted by vipetesz
3 egg whites
1/4 tsp cream of tartar
1/8 tsp salt
3/4 cup sugar
1/4 tsp almond extract
2 cups flaked coconut
In 2 1/2 quart bowl, beat egg whites, cream of tartar and salt until foamy. Beat in sugar, 1 tablespoon at a time; continue beating until stiff and glossy. Do not underbeat. Fold in almond extract and coconut.
Pre-heat oven to 300 degrees. Drop mixture by teaspoonfuls into small baking cups. Place them about 1 inch apart onto a cookie sheet. Bake just until edges are light brown, 20 to 25 minutes.
I hope this is what you are looking for.

4 to 6 eggwhites
1 cup granulated sugar
butter icing
1/4 cup all purpose flour
1/2 cup cashew nuts, pounded until powdered and then sifted
1 cup cake crumb
Pre heat oven at 200 degrees F. Beat the egg whites until stiff. Add the sugar gradually -- 1 tablespoon at a time. Fold in the flour and the cashew nuts. On a greased and floured cookie sheet, press the mixture through brown paper cone in shape of an oval. Bake for 15 minutes or until lightly brown. Let cool. Spread butter icing on one cookie and cover with another. Spread a little icing on all sides and roll in cake crumbs.
BUTTER ICING
3/4 cup sugar
3/4 cup Carnation evap milk
1 cup butter
Dissolve sugar in evap milk. Set aside. Cream butter until light and fluffy. Pour sugar-milk mixture in thin streams beating continuously until well blended.
** to shorten creaming time use 1 cup powdered sugar instead of granulated sugar.
Hope this works for you.
@Stellaluna thanks for the effort..is this the one that is commonly sold at the market? coz what ive known they use dessicated coconut.im confused with the ingredients.
I agree with the previous posts. It's easier to buy than to make them, but if you really want, I have a good recipe. The recipe has 3 stages which the author referred to as 'beating' -- the first beating you have to let the dough rise for 30 minutes. The second beating, you have to add mixtures, then let rise for another 30 minutes. The third beating, you have to let it rise for 60 minutes. After that, you can put it in molds with all the trimmings; and then you have to let it rise again before you can bake them.Originally Posted by rusti
I was going to make some for my Mom, but the process is so long. There must be a shorter version some where, but this recipe is supposed to be really good and flaky.
You are welcome. Yup that's the one -- dessicated coconut.Originally Posted by vipetesz
It has been a while since I had some. If I make some, nobody will eat them but me. Which is not so bad ... You know what?... this will make a great Christmas present. You can add some food coloring also -- about 3 drops should do it. I myself prefer the natural color. Maybe I can use colored wrapper.
You are funny. I have a 'no-bake' cookie recipe, but you still have to cook the ingridients over the stove -- the ingridients are oatmeal, peanut butter, butter, cocoa.Originally Posted by ladycroft62782

INGREDIENTS
* 1 cup unsweetened cocoa powder
* 2 cups white sugar
* 1/2 cup vegetable oil
* 4 eggs
* 2 teaspoons vanilla extract
* 2 cups all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1/2 cup confectioners' sugar
DIRECTIONS
1. In a medium bowl, mix together cocoa, white sugar, and vegetable oil. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the cocoa mixture. Cover dough, and chill for at least 4 hours.
2. Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper. Roll dough into one inch balls. I like to use a number 50 size scoop. Coat each ball in confectioners' sugar before placing onto prepared cookie sheets.
3. Bake in preheated oven for 10 to 12 minutes. Let stand on the cookie sheet for a minute before transferring to wire racks to cool.
