If I i remembered it right, Darwin didnt went to the Galapagos island to find proof about evolution. He went there to study, because he is a scientist and wanted to veer away from medical science because he cant stand the sight of blood. So he went there to study the animals. Taking notes on whatever he finds. Its only when he was back home going through to his notes that found about the variety and difference of the finches which was believed to be the basis for the formulation on the theory of the evolution.

Also "To see is to believe", just like you said, is just a saying. In scientific community "eyewitness evidence" is never accepted as the only scientific proof for any findings. and if you think that evolution is wrong because evolution does not happen overnight, then there might be something wrong here.
