I've tried authentic Pampangaeno cuisine when I went stayed in Pampanga and Tarlac for several weeks. Didto dyud ko tig-kaon sa mga carenderia in Dau, Mabalacat and outside Clark Airbase. Sisig dyud halos everyday nako kan-on. Nakasuway pud ko sa mga roadside eateries nga anha mo hunong ang mga buses bound for Bagiuo, La Union and Ilocos. Ang timpla sa Cabalen kung i-compare nako sa akong na tilawan medyo mild gamay. Ang kaldereta, papaitan and other goat dishes mao dyuy signature dish nila. Diha ko pirmiro nakatilaw og kanding nga pochero style ang pag-luto and I liked it.

Kung naa ko sa Manila, mo hapit dyud ko sa Cabalen (usually at Robinsons Malate) para sa ilang kare-kare and kaldereta. Buffet pud didto, and the price is the same elsewhere. Considering the place (SM Cebu) and the value for taste, I would say that if you are a fan of Pampanga's cuisine then Cabalen will whet your appetite pero murang naa dyuy kuwang gamay.

Perhaps, Cabalen should serve frog legs nga gi-tuwa og luto, which is a pampangga specialty, or the fried locust (which is seasonal). Both are delicious, if you get past the sight of the frog legs. Og ang ulo pud sa kanding nga gi roast or gi asal, naa pa ang mata. Lain tan-awon if you have a quessy stomach apan kung anha nimo kan-on sa inyoha, pirte dyu'ng lami-a.

By the way, one thing I noticed when I eat in other provinces, wala pa dyud ko kakita og Cebuano restaurant, except for stalls claiming that they are serving Cebuano style lechon (which is usually false). Buwad danggit hinuon pirteng mahala. pinaka-lami dyud ang buwad danggit from cebu.

In my experience, ang mga taga-Central/Northern Luzon dili kaayo hilig sa Cebuano style of cooking. Ang common nila nga comment is that parat ang atong timpla. Bisan ang ilang hipon didto, dili kaayo parat. Hinuon, hilig man gud sila didto og aslum, mao nang halin kaayo ang suka didto. Na baghu-an gani ko sa ilang dugo-dugo sa carenderia kay pina-hubsan man. Diri sa atoa sinabwan man.

    P298 plus $67.20 (bottomless iced tea) = P365.20
