It is a misconception that there are organisms that do/did not evolve.
All organisms evolve. Some evolve faster than the others while some evolve at a much slooooooo000000wer rate that you barely notice their evolution like humans and the examples you mentioned. In natural selection pien, when a specie
is well adaptive to the environment
the change (in their genotype) is barely noticeable for a loooooooooooooooooooooooong loooooong time and some or even many of these organisms continue to thrive to this day.
