Why upgrade to a 2007 version when older versions can still perform?

You don't have to. No one is forcing you to. As a consumer, you decide whether a new version of a product you have will be beneficial to you or not.

On the other hand.. from a business point of view, Microsoft will keep releasing new versions of Office to keep profits rolling. The Office suite is one of their biggest cashcow next to Windows.
