I met an italian who has a resturant in Italy, he said the secret in making spaghetti is to use ripe tomatoes and boil it with water.In italy they do not use canned spaghetti sauce even if it will take them hours to do it.they boil ripe tomatoes.Also parmesan cheese not cheddar cheese is used. the secret in making spaghetti is the pasta...In italy they make their own pasta like we do here with the pancit canton noodles..Ang ilang pasta didto flavored mao lami ang pasta sa italian restaurants.

on cheeses..you are right with parmesan (parmiggiano in italian) other types of cheese also used with pasta are mozzarella, pecorino, ricotta and mascarpone....
on the sauce thing...yes italians prefer to make their own marinara sauce ....the aroma permeates the neighborhood! pero karon daghan na man sad ready made sauces nga comparable sa home made....the simplest marinara sauce consists simply of oil and garlic and of course the tomatoes!!!
herbs are also important to give sauce its extra kick...commonly used ones are basil, oregano, and parsley.

@gwyn: i will EB even WITHOUT the nuts....pero hihintayin ko talga yan pine nuts mo ha...hehehehehehhehe
ako ba...magtatanim na talga ng basil after this typhoon season oi....mahal man gud kung sige ka buy ug fresh kay tua ra man ayala ko yan makita nya ang gasoline? hahayyyyy
@d'monyita ....ako naa ko small herb garden...basil, oregano, rosemary, peppermint and cilantro.....sus nindot ayo ang feeling oi...pinakuha lang sa veranda for fresh herbs while the sauce is simmering! these herbs can definitely grow in cebu...ok ra man ni sila hot climate....
oh by the way i got another tip...rinse pasta only if it is destined to be baked or to be eaten cool in a salad...otherwise ayaw i-rinse kay the starch helps the hot pasta meld with the sauce..
