@springfield...i lived in japan for awhile...and omg how i miss the food ...what do you want to know about sushi? do you already know the kinds of sushi ? (different methods of preparation not kinds of toppings)..let me know what specific thing you wanna know about japanese food and i will try to answer...
i would really want to learn japanese cooking too. specifically tonkatsu, tempura and sushi.
@ GWYN ... I am not a big fan of sushi though I would kill just learn the trade . Here in the US , it is by tradition that only Japanese people can become sushi chefs and I know 1 who is white that made to the ranks of sushi chef's because of his exceptional skills and knowledge . Isnt that an accomplishment specially a FIlipino with a sushi chef title ? I think it digs more deeper to become one than just knows how to prep and make one .
I do love Japanese foods though but sa mga noodles and meats lang nila . The only raw fish I eat is our very own KINILAWNG TANGIGUE .

there are different kinds of sushi:
1- nigiri sushi - mao na siya ang small clumps of rice nya naa topping nga raw fish, squid, shripmp etc
2- temaki sushi (te-hand; maki-roll) so from the name you can easily imagine nga this kind of sushi is rolled using nori (seaweed)
3- chirashi sushi - usually served in a rice bowl with the toppings of raw seafood or others
to make sushi is easy....first you need the Japanese rice....ayaw gamit subsitute kay importante kaayo ang consistency sa rice...naa nay prepared "sushi no ko" ...powdered sushi flavor in pouches...sa japanese supermarket...follow directions lang kon pila ang quantity per sa rice serving nimo....then you go forward whether you wanna make nigiri, te maki or chirashi...

OT: naay lami nga tonkatsu diha sa gaisano country mall...ofuku-san ang name sa restaurant...really authentic...and NONKI at AS Fortuna ...very very good restaurant....
@springfield....when i said to make sushi is easy ...kanang ato2 nga sushi...pero kon sushi chef...it takes years to master the skill ingon nila...strikto kaayo na sa japan...aside sa periodic test sa imong hands (ambot unsa na nga bacteria nga bisan manghunaw di matangtang) daghan pa kaayo requirements....do you know di allowed ang ladies to become sushi chefs ( aside sa mga turo2 styl lang ..or cheap sushi bars) they say women have higher body temperature than men...so dali daw madaoy ang fish....
the knives are also very critical...inig fillet sa fish and others...it is an art basically...plus you have to learn the culture kay apil man na sa eating and serving etiquitte (nge di kokamao spell!!) sus bro...ka proud nako kon ma sushi chef ka...manabi jud ko ug ayo.....kay i know how prestigious it is....ako gani dream sad na nako ...sige tan-aw sa sushi bars ma ibog ko mag tan-aw...pero as i said women are not "allowed"
@ GYWN .... kamao lang ko mo kaon ana cguro but mo prepare lahi gyud ang actual concept cguro sa hands on . Though maka picture ko ana imong gi sulti kay I am a regular customer of Todai japanese Seafood .
Hahaha .... in my dreams ! But who knows ? But if that is the case then I have no choice but to relocate for some time in Japan . I didnt even know about that strict hand temps , women are not allowed etc ... tnx for the information ! Trivial kaau to think it is nothing but just preparing and serving raw fish hehehe ... but like what I said , it digs deeper than that .

@springfield....daghan kaayo nag ritual ang mga hapon mangaon oi he he he...like when you order sushi for example...naa nay order of serving the sushi....di na mag pataka ang sushi master ug hatag...kay naay fish nga dapat unahon ug kaon versus lain nga fish etc....unya naa i-serve nga pickled ginger diba....naa sad na siya purpose mo reset na sa imo taste buds...for example kaon ka white fish...eat ka ginger gamay aron ready na ka to eat red fish like tuna etc....pero kani ako gi storya nimo mga kuti na ni nga arte2...puede ra gud labi na kitang mga pinoy...pero as i said lahi man ning inato...lahi man sad nang CHEF na jud diba....
but i guess naa man jud na training....depende ra jud sa interest...
ako bro hingaon kaayo ko...from the most basic sa ato...to the most exotic...so far wa pa koy gibalibaran....
by the way you know of sashimi of course diba? raw fish/seafood gihapon na siya but less the rice...mao nay diperensya with sushi.....kabalo ba ka horse sashimi is a big thing in Japan?
i love eating but i would be a bit queasy to eat raw horse meat.
i wait eagerly for the tonkatsu and tempura tips.
