The thing that you mean with ping is the latency and this latency increases as route change, upstreams saturate, problematic router on route, and other factors. As long as you are below 400 for web browsing you are fine. 150 below for gaming fine, 200 below is still acceptable...
You should be more concerned if you see frequent request timed outs or worse destination host unreacheable errors with your connection.
