cut cheese according to your preferred size.. wrap it using lumpia wrapper (use class A wrapper) deep fry until golden brown.. just play around with the type of dip you want.. (its always good to use good quality cheese, ikaw bitaw mo-kaon.)

i realized, you might be looking for the pastry kind of cheese sticks... hulata lng if naa mo post.. hahaha.

Cheese sticks entail easy-to-do steps and a "dab" of your
    creativity according to your taste

They come in different form and texture and even in filling!

Like the ones in Gerry's Grill, in addition to the cheese they used,
they put in a strip of green chilis to add more kick to it, that's why
they call it Chili Cheese Sticks.

This is the blog which features the chili cheese sticks.

In Roma Mia, they also have a different kind of sticks.
They called it Mozzarella sticks. It's so creamy, cheeeeesy
and soft in every bite! The enjoyable treat you get is when
you bite M sticks, the mozzarella oozes out of the dough
which makes it one big surprise

Here's one blogger yapping about the mozzarella sticks.

From these two different kinds of sticks, I hope you have an idea
on how to go about your sticks.. As for the dip, usually Mayo is the
basic ingredient and it's up to your desired taste as to what spices
or other condiments are you going to use.
