    bechamel + sauteed minced onions + roasted garlic in rosemary, crushed. bring to a soft consistency, no lumps, sauce should coat the spoon, strained. serve warm.

    tenderize your pork first with the back of your knife. marinade the pork with the juice of ginger, juice of garlic, sesame oil, salt and pepper. mix in 1 or 2 eggs depending on how much pork your using to your pork and put it in the ref for about an hour. dust the pork with CORN STARCH and fry until brown and set aside.

    mix in 1 cup white sugar, 1/2 cup vinegar, 1/2 cup unsweetened pineapple juice and food color (red and yellow will make it look orange) or banana catsup for color. bring to a boil then lower the heat and wait for it to thicken. DO NOT USE CORN STARCH TO THICKEN the sugar caramelization will thicken the sauce.

    using very little oil saute your veggies add the pork a drizzle with the sauce until you coat the pork on all sides. the real sweet and sour pork like if you go to tea of spring is not swimming in sauce, yes just like dimsum break.

    chef yamiks will kill me for sharing this recepe. he is an old guy who use to be the cook of the original ding qua qua at the down town area. try it
