there are also times when you look at a certain recipe, some ingredients are just so rare that even the most sophisticated grocery in town don't have 'em. so i just use whatever's available and within reach.

tell me, how often do you subsitute or change ingredients in recipes? and what sorts? for example, instead of butter, you put on margarine.

also, what herbs and spices compliments what certain meat. (this really confuses me!) i heard basil is great with chicken.

of course, cooking with garlic. what dishes require lil, more or no garlic at all.

    inputs please...
we have a similar approach to cooking. infact, whenever i cook, it does not always turn out the exact same flavor. i love to NOT measure my ingredients when i cook. Making substitutes for ingredients is also something that most cooks and self-taught cooks (like myself) practice. as for herbs and spices, hehehe i tend to just use anything that's available in my pantry; it still tastes good. Garlic is one of my favorite ingredients and i would say the amount you put depends on you.

The only secret in cooking tempura is to make sure na the oil in the pan is hot enough before nimo ibutang ang tempura. You'll know it coz mag-aso na jud na ang ibabaw sa pan nimo. And while cooking, cover the pan.
