we have a similar approach to cooking. infact, whenever i cook, it does not always turn out the exact same flavor. i love to NOT measure my ingredients when i cook. Making substitutes for ingredients is also something that most cooks and self-taught cooks (like myself) practice. as for herbs and spices, hehehe i tend to just use anything that's available in my pantry; it still tastes good.
