Here is a declaration of Love - I am a cake lover and TiraMiSu is for me the single most delicious recipe imaginable. There is a reason why it is called TiraMiSu - Lift me up! Because it does!Of course being in love with a cake means that one is always desperate to find this one place that makes the best variation and in Cebu that is a a very hard token.
Let me give it to you straight -there is none. Not a single place that would do the trick. Why? Well maybe because the original recipe requires a large portion of mascarpone, which is very hard to find here and extremely pricey and maybe because it does also require a fine Cognac or at least Amaretto to spread the magic on your tongue.
Here what you usually get is a variate of substitutes that try to imitate the taste, The best I admit is to be found in Roma Mia - if they have it - often they don't some are worse some are better the one here on the pictures below is from Bread Talk and is way to expensive for what it is but it is eatable.I know I know harsh words so let me tell you how it is really done:You need 4 eggs 400mg of Mascarponea cup of sugarsome lady fingersA good shoot of Cognac or Amarettodecent espresso andcacao powder not the instant stuff the real powder it must be bitter! - First you need to separate the yolk form the whites in the eggs. - with mixer at high speed beat eggwhite until hard and put aside in the frig or freezer.
