    Pickled Ampalaya Recipe

    Ingredients

    • 1 piece large size bitter gourd (ampalaya) thinly sliced
    • 1 tablespoon of salt mixed in a large bowl of water
    • 1 medium size carrots cut into strips
    • 1 medium size red bell pepper ( yellow or green is okey) cut into strips
    • 1 medium head of garlic thinly sliced
    • 1 tablespoon of salt
    • 1 cup white vinegar
    • 1/2 cup sugar
    • juice of match box sized ginger


    Directions

    1. Put the ampalaya right after slicing it in a large bowl of salt water.
    2. In a separate bowl ( large bowl) blend well ingredients 7,8 and 9 until sugar is totally dissolved.
    3. Mixed ingredients 3,4,5 and 6. squeeze then throw away the juice.
    4. Squeeze the amplaya then throw away the juice.
    5. Pour in all the vegetable to the liquid mixture then mixed well.
    6. Placed it in an air tight glass jar. you can consume it right away or can be store for about a month long in room temperature.
    7. You can replace amplaya with green papaya

    Mix flour, sugar and cocoa:





    Spoon in 1 egg





    Pour in milk and oil, and mix well








    Put in microwave for 3 minutes on maximum power (1000watt)





    Wait until it stops rising and sets in the mug





    Tip contents out of mug onto saucer and enjoy!

    We've tried this some time ago. Pero dili pwede kay naa man mga kids.
    I need to bake a bigger cake man... he-he-he!

    Sweet and Sour Pork



    Estimated cooking time: 45 minutes


    Sweet & Sour Pork Ingredients:

    *

    1/2 kilo pork loin, sliced into pieces
    *

    1 small can pineapple chunks
    *

    1 large onion, quartered
    *

    1 red & 1 green bell peppers, sliced into strips
    *

    2 tablespoons of soy sauce
    *

    3 tablespoons of peanut oil
    *

    4 tablespoons of cornstarch
    *

    3 tablespoons of ketchup
    *

    1 tablespoon of sugar
    *

    1 teaspoon of salt
    *

    3 cloves of minced garlic

    Sweet and Sour Pork Cooking Instructions:

    *

    In a pot, boil pork in 2 cups of water with 1/2 teaspoon of salt until tender, then drain (keep the pork stock for later).
    *

    Mix 2 tablespoons of cornstarch and soy sauce then coat the pork with the cornstarch mixture.
    *

    Fry the pork in a skillet until golden brown, set aside.
    *

    Dissolve the remaining 2 tablespoons of cornstarch on 1/2 cup of pork stock - set aside.
    *

    Sauté garlic and onions on oil, then add the bell peppers, pineapple chunks (including the syrup), ketchup, sugar, 1/2 teaspoon salt and the dissolved cornstarch. Stir until sauce thickens.

    Pour over fried pork then serve with rice.

    Rocky Road Bars

    “Dad, anything with marshmallows and chocolate has to be good.” Katie was right; they are good. These interesting cookies are almost like candy bars—a chewy confection with nuts and chocolate.
    These are very quick cookies. With all the ingredients on the counter, it took us eight minutes to pop these cookies in the microwave. We made several batches, tinkering with them to get them just right. Everyone declared them “very good”.

    Ingredients
    · 1/2 cup butter
    1/2 cup brown sugar
    · 1 1/2 cup quick rolled oats
    · 1/4 cup light corn syrup
    · 1/2 cup dried semi-sweet chocolate chips
    · 2/3 cup miniature marshmallows
    · 1/2 cup walnut pieces

    Directions
    1. Place butter in an 8-inch square, microwave-safe baking dish. Microwave until the butter is melted.
    2. Stir in the brown sugar until dissolved. Stir in the rest of the ingredients. Press the mixture firmly into the dish.
    3. Microwave for three to five minutes or until lightly browned. If your microwave does not have a rotating carousel, rotate the dish twice during cooking.
    4. Let the cookies cool and then cut them into bars with a sturdy knife. Wrap them individually to pack in a lunch.

    This recipe will make sixteen 2 x 2-inch squares.

    Baker’s note: Since microwave ovens vary significantly, you may need to experiment with cooking times. In our test microwave, four minutes was just right. Three minutes left them a little on the sticky side—but still good—and five minutes made them too chewy.
