Print log viewer / to file converter

Is there a way to convert print logs going to print server into jpg or any picture format, has anyone tried making a program like this? The purpose is to monitor unnecessary printing.

Something like whatever comes out from the printer will write a jpg version of the hard copy to file in a certain folder.
