1. they have diffent thermal specification
2. different voltage range
3. diffent thermal design power
4. xeon may need a compatible motherboard.
5. some xeons have socket 771. desktop are 775.
xeon are designed for servers - multiple processing.
off topic: i think xeon is better at running gtaIV. ^_^
still, xeon are for servers. regular quads are for desktops.

If you're planning to go for a single proc setup, i suggest you go with core i7

I haven't heard Tyan having octa-socket capable core2 xeon motherboard. The only core2 Xeon chipset i know that can handle more than 2 CPU's is the 7300(Clarksboro) chipset, which can handle a maximum of 4 cpu's.
So prolly what you saw at the TechEd demo you saw was prolly a tyan typhoon series system, they've been showing those things since '06 i believe... But those are blade-based designs, and as such are composed of multiple motherboards.
