Ideally you need a proper absinthe glass, which has a small reservoir at the bottom. Into the glass goes the neat absinthe. Next, you place the pierced absinthe spoon over the top of the glass, on to which goes a lump of sugar. Iced water is poured over the sugar, through the spoon, and down into the glass. The water turns the absinthe opaque (this is called the "louche"), and the flavours, herbals and aromatics are released."

    there's another, more interesting way, i think it's called the czech (or was it dutch...? dunno, i was too wasted... lol) ----> you pour a shot of absinthe into the glass, dip a sugar cube into it until it sucks up some absinthe, pick up the sugar cube with an absinthe spoon, then light the sugar cube on fire above the glass and let the melting caramelized sugar drop into the absinthe, then mix in the water... lovely...
