Kilawin!!! kalami!
Kilaw Sa Skin -kilawin! The goat's skin is ripped off of its' coat by burning it with a blow torch or dried coco leaves until it looks dark. It's chopped into small cubes or strips, whatever, then usually fried but not too much to give it half cooked appearance. Spices and vinegar and kalamansi juice are added.
I don't know the exact sequence how to do it. But I saw once, a friend who did it quite fantastic.
