    Buttered Oyster Mushrooms with Garlic
    6 servings (1/2 cup per serving)
    Preparation time: 15 minutes cooking time: 5 minutes

    this makes a good accompaniment to beef steak or pork chop

    3 cups oyster mushrooms
    1/4 cup butter
    2 tablespoons minced garlic
    salt and pepper to taste

    - wash and clean mushrooms. slice and soak in water for about 10 minutes. set aside.
    - in a shallow pan, melt butter and stir-fry garlic until fragrant.
    drain mushrooms and pat dry with paper towels. add mushrooms to pan, stirring until well coated with butter. cover pan and reduce heat.
    - cook for 2 - 3 minutes, stirring occasionally. season with salt and pepper and serve immediately.

    Sweet Peas and Mushrooms
    6 servings
    Preparation time: 5 minutes cooking time: 10 minutes

    1/2 kilo frozen sweet green peas, thawed
    2 beef bouillon cubes
    1 cup water
    1 teaspoon salt, plus additional for seasoning
    1 cup fresh oyster or button mushrooms
    fresh mint leaves

    - in a deep pan, combine peas, bouillon cubes, water, and one teaspoon of the salt. cover and bring to a boil. reduce heat and simmer for one minute.
    - add the mushrooms and continue cooking over low heat for 5 minutes, stirring occasionally. remove from heat and drain. season to taste with salt. spoon into serving platter.
    garnish with fresh mint leaves before serving.

    Here is another mushroom recipe i found in the net:

    Oyster Mushroom Soup
    The Mushroom Council

    Ingredients

    1 large clove Garlic, minced
    3 tablespoons Melted Butter
    3 tablespoons Olive Oil
    1 medium Onion, diced
    1 pound Oyster Mushrooms, sliced
    3 cups Chicken Stock
    2 tablespoons Tomato Paste
    2 jiggers White Port
    3 large Egg Yolks
    2 tablespoons Parmesan Cheese, grated
    1/2 cup Parsley, minced

    Steps
    Saute garlic and onion in butter and oil. Add mushrooms. Cover and cook on medium heat until mushrooms are tender.
    Add chicken stock, tomato paste and wine. Salt and pepper to taste. Simmer 10 minutes. Mix 3 beaten egg yolks, Parmesan cheese and parsley. Simmer for 5 minutes.
    Serve with garlic bread.

    panghatag nya sa imong mushrooms kung naa na...

    we went to this mushroom store at tagaytay, they cultivate different kinds of mushrooms and serve mushroom dishes(from mushroom soup to mushroom burgers) lami jud kaayo. sayang lang walay store nga ingon ani diri. they also sell the mushrooms that they have grown.

    here is another recipe for mushrooms, one of my kids favorites ni sa akong mga luto

    Garlic Champignon Mushrooms
    inspired by the Garlic Mushrooms i had at Kahayag (a clone recipe I made)

    6-10 cloves of Garlic (or more according, adjust according to your preference) crushed and minced
    1 can of Cahmpignon Mushrooms
    Knorr Liquid Seasoning
    Salt and Pepper
    Olive oil (or any kind of cooking oil)
    Butter

    Saute garlic in butter. add olive oil. add mushrooms including the liquid. let it boil. then season with Knorr according to taste. add salt and pepper according to taste. simmer the mushroomsÂ* until the desired firmness of the mushrooms is reached. serve and enjoy.

    3 MUSHROOM LUMPIAS AND HEALTHIER MUSHROOM WRAPS

    Makes 12 lumpias or wraps
    2 tablespoons minced garlic
    1 tablespoon minced ginger
    2 red sliced onions
    1 pound shiitake mushrooms, stemmed, cut into 1⁄4-inch slices
    1 pound oyster mushrooms, hand ripped into halves or quarters, lengthwise
    1 pound maitake mushrooms, ‘florets’ taken off with a knife, stem trimmed and julienned
    2 cups dry white wine
    1 package lumpia wrappers
    2 eggs mixed with 1⁄4 cup water
    1 head red leaf lettuce, washed, spun dry
    1 bunch mint, washed, spun dry
    Grapeseed or canola oil for frying
    Kosher salt and freshly ground black pepper, to taste
    1⁄2 cup Three Chile Dipping Sauce for serving

    In a wok coated with oil over medium heat, sauté the garlic, ginger, onions until soft, about 1 minute. Add the shiitakes, sauté 2 minutes, then add the oysters and maitakes. Season with salt and freshly ground black pepper to taste. Deglaze with white wine and completely reduce. Check for flavor. For the wraps, place small mound of hot mushrooms on lettuce and roll free form. Serve with dipping sauce. Transfer to a tray and let cool to room temperature. Place in fridge or in the freezer to speed up cooling process. To make the lumpias, lay out 5 sheets of lumpia wrappers on a work surface with a corner near you. Place small mound of the filling a little above the corner and bring the near corner of the wrapper over the filling to enclose it. Brush the edges with egg wash, roll tightly toward the middle of the wrapper, then fold in the sides and continue to roll to make a sticklike spring roll 1⁄4- to 1⁄2-inch in diameter. Make the roll as thin as possible. Rest the roll seam side down for 2 minutes and repeat with the remaining wrappers and filling.

    Heat a fryer or stock pot with oil to 350ºF. Add lumpias and fry until GB&D (golden brown & delicious). Remove with a large mesh spoon and drain on paper towels. Repeat with remaining lumpias. Slice on the bias and serve on a bed of lettuce garnished with mint leaves and ramekins of dipping sauce.

    Serve with: Sapporo or, equally tasty, Michelob Ultra

    Portobello Mushroom Burgers

    The great flavor of portobello mushrooms in a veggie burger.
    Yield 4 burgers
    Time 2 hours

    Tools
    large saucepan
    food processor or masher
    knife
    large frying pan
    large bowl

    Ingredients
    2/3 c dry lentils
    6 oz portobello mushrooms

    Substitutions if portobello is not available:
    Brown mushrooms, shiitake mushrooms, brown crimini (smaller)

    2 T olive oil
    1½ c onion, minced
    2 large cloves garlic, minced
    ½ t ground cumin
    ½ t salt
    black pepper
    2 c bread crumbs
    ½ parsley, chopped

    Directions Simmer the lentils in water until tender, about 25 minutes. Let cool, then mash or purée.

    Trim, clean, and finely chop the mushrooms.

    Sauté onions in 1 T olive oil, stirring occasionally, until soft, about 5 minutes. Add garlic and cook for 2 more minutes, stirring constantly. Add mushrooms and cumin and cook for 5 minutes, stirring occasionally, add salt and pepper, and remove from heat.

    Transfer all ingredients to a single bowl and mix well. Chill for at least one hour.

    To cook: Form the mixture into four patties and either fry them over medium heat until golden brown, about 3 minutes on each side, or grill them over coals. Serve hot.

    Stir-Frying is one of my favorate style of cooking. So here's one...

    Stir-Fried Oyster Mushrooms
    Serves 3 to 4 as a side dish

    Oyster mushrooms are incorporated in many Asian dishes. They cook quickly, and are therefore naturals for stir-fries.

    2 tablespoons peanut oil
    1/2 tablespoon Asian sesame oil (see page xx)
    One 1/8-inch-thick slice fresh ginger, peeled and minced
    3 garlic cloves, minced
    1/2 pound oyster mushrooms, sliced or torn in even pieces
    1 cup fresh or thawed frozen peas
    2 tablespoons chicken broth
    Pinch of sugar
    2 Chinese-style ( firm ) tofu cakes, cut into cubes
    2 tablespoons soy sauce or more

    Using a wok or skillet, heat the peanut and sesame oils together until bubbling.
    Add the ginger, garlic, mushrooms, peas, and sugar and quickly stir-fry for 2 to 3 minutes.
    Add the broth. Cover and simmer for 3 to 5 minutes.
    Add the tofu and soy sauce.
    Cook uncovered for 3 minutes.
    Serve immediately over rice.

    'Coz if i were the guy, i eat anything! He-he-he! Hab-hab ra jud ko! Kanyahay lang wala nitambok. But i prefer fish and vegies over pork and beef.

    ...there was one time i had a dinner date with my girlfriend (now my ex' kay married na ko). She just bought 1 kilo of tuloy nga isda. Dayon pag-abot nako, among gisugba (kami jud duha). Saw-saw lang sa patis with kamatis, plus rice, payt na! (Mais nga kan-on is generally better with our sinugba but she knows i dont eat mais) ...Para nako, mas romantic pa ni sa candle-light dinner.

    ...my point is, anyting goes. however, you should always consider his and your preferences.
    I am a cowboy type, so i find what we did was even more romantic.

    if i were to cook for a dinner date, i'd cook his favorite dishes. my hubby likes humba, grilled pork belly, garlic mushrooms, buttered corn and carrots, crispy kangkong, cream of corn soup, tinolang manok, mango float, fruit salad and the list goes on....hehehe

    the menu would look like this:
    for appetizer - crispy kangkong and/or garlic mushroom
    soup - cream of corn or tinolang manok
    main dish - humba or grilled pork belly served with rice and buttered corn and carrots
    dessert - mango float or fruit salad

    zinfandel would be a good choice of wine for this type of menu.
