small size ginger, half the size of your thumb, crushed or grated
Combine all ingredients. Marinate the duck overnight -- preferrably in a zip-lock plastic bag. Squeeze the air out, so the duck is well coated with marinade. Bake at 350 degrees F.
3 1/2 lbs. for 2 hours
5 1/2 lbs. for 3 hours
