Every type of pasta and cheese is available where I’m from (Australia) so we’re lucky because I love me some good Italian food! I’ve watched someone make ravioli from scratch and even briefly worked at an Italian restaurant. It’s great comfort food! A lot of the time we try to look for pasta alternatives that are gluten free, for example, spaghetti made from black beans! There are so many now...if you don’t mind spending more.
I really enjoy spaghetti aglio e olio too and it must have chilli! Quite easy to make. My tip would be when cooking the spaghetti is to cook it til it’s not quite ready, while it’s still a bit chalky in the middle then when you cook it with the other ingredients it will become al dente.
All our pasta dishes are meat-free (oftentimes dairy-free) but still delicious!
