wow... i love omelette, and will surely try your recipes.
simple omelet recipe (i think mao ni spelling.. hehehehe).. eggs lng, mix it with evap milk and then some grated cheese then a bit of salt to add taste. then mag-gisa sa ka ug kamatis ug bumbay, but make sure you use butter (not margarine; well haven't tried margarine yet) then after the gisa-gisa, put the mixture in, until it's cooked![]()
Walay nakahibalo ngano 2 ka spelling ang gi honor to describe that egg dish na " OMELET " and " OMELETTE " . I prefer to use the OMELETTE na spelling pod kay kung OMELET ra , and looks like a DIALECT WORD not associated at all on any form of dish . Para ako-a lang na ha .

My tips for the perfect OMELETTE :
- use butter instead of oil
- sautee first the ingredients before adding the eggs
- as much as possible , ingredients should be CHOPPED instead of CUBED
- add a pinch of salt and pepper altogether with the milk with the eggs while the toppings are being sauteed , not after the eggs are being cooked .
- an OMELETTE will never be an OMELLETE till it is folded . Folding it once is just fine , on fine dining it is folded 4 times to create a rectangular shape . If it is not folded , TORTA kagawsan ana which is technically the same thing .

Beaten eggs (thinned out slightly with milk or water), sliced hot mexican chili's, sliced mushrooms (pre-sauteed), small amount of diced tomatoes, grated or sliced montery jack cheese if I don't have any mexican queso blanco (colby or mild cheddar will also do).
Hot pan is the key. I use a small amount of butter and a tiny bit of olive oil to melt in the pan. Add the eggs, when almost cooked through, add the chili's, mushrooms, tomatoes, and cheese to one side only of the circle shape. Turn one half (the half with no ingredients) of the circle onto the other.Cook the omelette enough to warm the interior ingredients including the cheese melting (I do not enjoy runny eggs). Top with warmed salsa and finally a dollop of cold thick sour cream.
This is a mexican omelette tuned to my taste buds (I do not like onions in my omelettes). Adjust the flavors to your own.

Thanks for the compliment Springfield, nice to hear someone likes my little breakfast experiment... especially a trained foodie like yourself. Actually, here I use the glass jarred "Mezzetta" brand of "Hot Chili Peppers" imported from CA (I don't think they are jalapenos though). I purchase them at Ayala. The imported jarred jalapenos I have purchased here are always too soft and salty. I tried two different brands and both times I ended up throwing them away. The Mezzetta chilis are always nice and crisp. Unfortunately, the sour cream sold here (Nestle brand) is not what I grew up on, it is not very thick. I have gone before to Tinderbox to get some of their italian imported sour cream and they were out of stock. I buy my ricotta from them. Expensive though, so it's only once in a while. An p 1,800 lasagna can hit hard if done too often... heheh.
Would be honored if you had something like that on your menu of your upcoming omelette station/s. Just name it your "Pablo Special" omelette in my honor.... heheh.
