MY BASIC RECIPE FOR THE EGG OMELETTE USED TO WRAP THE FILLINGS IN:
6 large eggs
2 tablespoons water (to make the eggs creamier and tender)
Sea salt and freshly ground black pepper
1-1/2 tablespoons unsalted butter (like Magnolia)
Whisk together the eggs and the water until just blended. Whisk in salt and pepper to taste.
Melt the butter in a 12-inch nonstick omelette pan over medium high heat until it is hot and turning golden. Add the egg mixture and stir, bringing the cooked edges toward the center so the uncooked egg runs to the edges. When the omelette is generally set but still quite liquid, sprinkle over whatever filling you plan to add and let it cook without stirring for another 1 to 2 minutes, or to your taste.
When the omelette is cooked to your liking, slide it out of the pan until half of it is on the plate, then fold the remaining half over the first half. Serve immediately.
One of my favorite fillings:
In a separate pan, saute smoked bangus, flaked (about 100gms) in a bit of olive oil then
mix with (4 tbsp) cheese ( i like Eden cheddar cheese because it's cheap and readily available) so yummy!
mine is called special omellete cake
8 eggs
1/2 cup button mushroom, diced
50 gms shrimps, shelled
2 cooked potatoes, thinly sliced or diced
1/2 cup cooked mixed vegetables( corn,carrots and green peas)
4 tbsp onions, chopped (1 T for each omelette)
oil for frying
salt and pepper
tomato catsup (optional- basin naay di ganahan catsup)
the dish is composed of 4 small round omelletes of 2 eggs each, 1 mushroom, 1shrimp,1 potato and 1 mixed veg placed 1 on top of the other and garnished with tomato catsup. when serving, cut like a cake and the different colours and tastes blend to make an attractive dish.
sorry na wrong spelling nako ang omelette...if you like it to be hot and spicy, pwede pud but that's another kind of omelette...

And kani siya is COMBO ni sila mga classmate hehehe ... served with POTATO FRITTERS and your choice of 1 slice of FRENCH TOAST or 1 PANCAKE and your choice of beverages na SODA , COFFEE , JUICE or BOTTLED WATER . On top of the ALL TIME FAVORITE AMERICAN BREAKFAST , naa gihapon ang atong own SINANGAG CLASSICS like the TAPSILOG sa mga wala nakaila unsay OMELETTE and hadlok mo EXPERIMENT hehehe.
I'll keep you guys updated and looking forward for the support of iSTORYANS in the opening of it . I'll be setting this up somewhere in the SOUTH SIDE specifically in TABUNOK , TALISAY and if finances permits , I'll open up another one somewhere in the MANGO AVE area also .
