    Just wanna share some basics...

The good thing abt the 3 basic sauces below is that it takes jst abt as long to cook as it takes to boil the pasta very convenient sa mga peeps nga pirmi lang gadali

AGLIO E OLIO (Garlic & Olive Oil)
two simple ingredients but one of the best combinations. add ingredients that wont overpower the flavor. I like mine with prawns and zuchini.

around a cup of olive oil
1/4 cup finely diced garlic (i usually put more)

in a heavy skillet, heat the oil and slightly cook the garlic

    RED SAUCE (TOMATO)
add assorted veggies, different kinds of mushrooms, meat, sausages, seafood to this recipe for limitless possibilities. my personal fave are big meatballs

about half a cup of olive oil
crushed garlic (for me, the more the better)
around a cup of chopped white onion
around 3 cups diced fresh plum tomatoes or 2 cans whole peeled tomatoes
    a cup of tomato sauce
    chopped parsley
    salt & pepper to taste

heat oil. saute garlic until golden brown. add onions, stir until it becomes translucent. add tomatoes. simmer, stirring constantly until tomatoes are half cooked. add tomato sauce. stir constantly. cook for around 15 minutes or until sauce thickens. season with salt & pepper.

    WHITE SAUCE (BUTTER)
vary by using cheeses, herbs & spices. you may also add seafood, mushrooms, veggies, meats. i like mine with canned tuna

around half a cup of butter
    half cup flour
    fresh milk, around 4 cups
    salt & pepper to taste

melt butter. add flour. stir continuously until well blended. add fresh milk slowly, stir while pouring. simmer until sauce thickens. season with salt & pepper.

^^^ use this when making La Sagna add a pinch of nutmeg powder instead of flour, use cheese to thicken bt not parmisan, blue cheese, or goat cheese.

@bookee: what specific pasta did you try? para makihabalo mi what to avoid...
have been wanting to try it out there lately, but am just so busy right now, wala tym...

do give us your recommendations on what to order/ avoid

Just saw a recipe for a filipino version of pasta at a magazine:
VIGAN LONGGANISA PASTA TREAT (Serves 4-6)
    10-12 cups water
    1 tbsp salt
    500 gms spaghetti noodles
    2 tbsp olive oil
400 gms Vigan longganisa, skin removed, roughly chopped
    5 cloves garlic
    1/2 cup sliced white onions
100 gms fresh tomatoes, diced, seeded
    1 tbsp dried thyme
1/2 cup grated Cheddar cheese, divided
    1 tbsp butter

Bring water and salt to a boil and add noodles. coook until al dente, drain and discard the water.
Heat olive oil and saute longanisa until fat is rendered. Remove the longganisa, leaving oil behind to saute the 3 garlic cloves and onions in. Add back the longganisa, and also add the thyme and tomatoes.
Stir in 1/4 cup grated cheese, season with salt and pepper. Let stand for 2 minutes.
Add cooked pasta and toss well. When well incorporated, add butter and remaining 2 minced garlic cloves. Sprinkle remaining cheese on top. Serve hot!

^ avoid carbonara and spicy meatlovers (sounds like that na sauce). i dunno if their plain spaghetti tastes any good.

we had arrabiata and devil's own... both with fettuccine (coz mao na lang available along with penne)
both looked the same... both watery... only difference, devil's own was mas halang gamay kaysa arrabiata.
