    Ingredients:

    1 onion, diced
    2 red bell peppers, diced
    3 cloves garlic, minced
    1 carrot, sliced
    1 can chickpeas (optional)
    4 tbsp olive oil
    1/2 tsp cumin
    1/2 tsp coriander
    1/4 tsp cayenne
    2 1/2 cups diced tomatoes
    1 cup coconut milk
    1 cup peanut butter
    1/2 cup vegetable broth
    juice from 3 limes
    1 tsp salt
1/2 cup fresh chopped basil or cilantro
    Preparation:

Sautee the onion, peppers and garlic in olive oil in a large pot until onions are soft, about 3-5 minutes.
Add the remaining ingredients, except for the basil and bring to a simmer. Allow to cook over low heat for one hour.

Transfer half of the soup to a blender and puree until smooth, then return to the pot. Add basil or cilantro and enjoy your coconut soup!

    Default Garlic Shrimp Pasta

1/2 kilo pasta (fettuccine, spaghetti, angel hair, linguine, or any)
1/2 kilo medium shrimp (but since I like mine to be shrimpier, I bought 3/4 kilo)
    60g butter
    Italian seasoning
red pepper flakes (amount will vary to your preference)
freshly ground black pepper to taste
    herb of your choice
2 big cloves garlic, minced ( amount varies if you really like garlic or not)
    french bread or garlic bread
    salt or chicken cubes
    3 drizzles olive oil

preparation and cooking time: 20-30 minutes

    1. Cook pasta as instructed in the package
    2. While cooking pasta, add herb, a little bit of oil so the pasta won't stick with each other, and salt or chicken cubes
    3. After pasta is cooked, set aside.
    4. On a wok/skillet, melt butter in medium heat. Add garlic and cook for about 5 minutes.
    5. Add shrimp and cook until they begin to turn pink and curl.
    6. Add cooked pasta, red pepper flakes, ground black pepper and Italian seasoning one after the other. Add olive oil and cook for about 5-7 minutes .
    7. Serve instantly with the french bread (I used the extra butter and minced garlic to make a garlic butter spread).

    serves 7-9 people

    BUDGET: P600-P700.00

sulit jud ni considering na daghan servings imo mahimo.
