    Default Where to buy a "pizza stone" in Cebu?


    Can anyone help me? If you could tell me where I might be able to purchase a pizza stone or pizza stone kit (stone, rack, and wheel) in Cebu?

    Thanks, tried there yesterday. Unfortunately they didn't have any. However, I did find a couple of things that I have been having trouble finding.... namely an "Oven Thermometer" and a "Candy Thermometer".... so your suggestion turned out to be useful anyway. Thanks!!

    Still requesting help on where to buy a pizza stone.... .

    a pizza stone is basically granite stone that hasn't been polished but was heat-treated. if you can't find one from the shelves, try this option.

    1. buy a 40cm x 40cm or 60cm x 60cm granite stone (tell the hardware or seller to give you the italian granite, and NOT the ones from china or synthetic granite). ask for SOLID GRANITE and not granite tiles. the genuine granite stones are usually an 3/4" - 1" thick.

    2. polish it lightly by hand using a course stone sanding paper, just enough to get the rough edges off. leave it slightly rough.

    3. pour a generous amount of olive oil on the baking surface and allow the oil to seep into the granite.

    4. heat-treat the granite by putting it into a 450 F hot oven for 1-1 1/2 hours. allow to cool.

    5. repeat 3 and 4.

    the olive oil and heat treatment will prevent the stone from cracking or breaking. the olive oil will also seal the granite so it won't affect the taste of the pizza. pizza cooked on granite gives the dish a different taste from one that was cooked on aluminum forms. the bottom crust will be more evenly browned, and it's the toppings that usually gets cooked first. some bakers using granite stones usually partially cook the crust first before taking it out, then put on the toppings, then put it back in again to prevent the toppings from overcooking. it all depends on how you like it, but usually, granite baked pizzas has a more chewy interior and a crunchy bottom and top because of this process.

    i have seen pizza stones made out of volcanic rock at rustans a few years ago but i haven't noticed one lately. i also saw one synthetically made from Pinatubo lahar but that was in metro manila.

    try an unpolished or uncoated ceramic tile. most of the pizza stones are ceramic and not granite bcoz its more porous and will absord the moisture so ull have a cruncy and even baked crust :mrgreen:

    i managed to find one from the tile shops but its really difficult to find coz they wont search the whole bodega for 1 tile... unless you know the owner. i got 3 pcs. last time coz maikog ko palit ug usa ra ...
