The streets of Bacolod will once again come to life as it celebrates its annual Masskara Festival this October. A good time to visit and explore Bacolod's countless gastronomic offerings. Here are some of our current favorites. Namit gid!
Chicken Inasal
Where to go for the best Chicken Inasal in the city?
It's a toss-up between the air-conditioned Chicken House on Lacson St. and Aida's located at the ‘rustic’ Manokan Country which is just a stone throw away from SM Bacolod.
Bacolod is well known for this mouthwatering grilled chicken. A chicken barbecue dish that is marinated in a mixture of sinamak (palm vinegar infused with loads of native spices and herbs) before it is charcoal grilled to perfection. For the best experience, eat the inasal with garlic fried rice topped with some of the extra chicken oil or drippings and then dip the chicken in the ubiquitous mixture of soy sauce, vinegar and calamansi. Best chicken parts to order are the paa (thigh), pecho (breast) and isol (ass).

Where to eat the best Batchoy in Bacolod?

Batchoy is a native noodle soup traditionally garnished with pork (usually innards), crushed pork cracklings a.k.a. chicharon, vegetables, and round spaghettini like noodles (miki). Its origin can be traced to the neighboring district of La Paz, Iloilo. This hearty soup dish usually comes in three variants – regular, special and super special. The word “special” usually just translates to an additional serving of liver strips and raw egg. But, the original version at 21 Restaurant serves a “Super Special” that includes a topping of ‘utok’ or bone marrow that truly makes this batchoy taste even better than the neighbor’s!

Aboy’s Restaurant, Golden Field Commercial Complex, Bacolod City
Aboy’s is the locals’ favorite to-go place for anything grilled. An extremely reasonably priced restaurant serving some of the best tasting freshly grilled seafood. Must orders range from the grilled marlin, tinolang halaan soup, adobong squid fat, and grilled scallops plus (probably) the best tasting sinugbang pork liempo in town (if not the country)!
Cansi
Where to eat the best Cansi?
Sharyn’s Cansi House, C-58 Narra Ave., Capitol Shopping Center, Bacolod City
The best cansi in Bacolod can be found in a non-descript storefront located along the area on the far end of 6th street that the locals simply call “shopping”. Cansi is a typical Negrense soup dish made of beef knees or marrow and langka (green jackfruit). This soup dish that one can best describe as a cross between a bulalo and a sinigang uses batwan (a fruit that can only be found in the Western Visayas) as its main souring agent. What makes Sharyn’s cansi different from the rest of the pack is the fact that it still employs an old cooking method (as it is slow cooked over live charcoal fire) which adds a faint but distinctive flavor enhancing smokiness to the broth.
Going Italian
Where to go for the best Italian fix?
Trattoria Uma, 15th and Lacson Streets, Bacolod City (check post #1073)
You won’t find any local food in this neighborhood Italian restaurant that surprisingly dishes out real good Italian food that can very well compete with the best Italians in Manila.
Some locals say it’s also “expensive for Bacolod” but “definitely worth a visit every now and then”.
