Notwithstanding numerous pasta dishes (mostly italian), my favorite noodles are:

Home-made Pancit Bihon (with chicken, pork, or shrimp). I usually like thicker noodles, but when it comes to pancit, thin noodles are the tastiest for me. I won't elaborate on Pancit cuz we all know about that. I don't eat the packaged version too often because it doesn't compare to me.

    Korean Noodle dishes:
Chajang Myun (noodles with black bean sauce)
    Shin Ramen (spicy noodles)
I lived in Korea for 2 years total. I love their Shin Ramen. This is very spicy and tasty too. When my friend and I were low on cash (which seemed like always) we would live on this stuff (and Peanut butter/jelly sandwiches..heheh). We would add things to make the ramen different & more of a hearty meal. We would add eggs, mushrooms, hot dogs, jalapeno peppers, mixed vegetables, tuna fish, or even a slice of cheese if we took out most of the broth. We didn't add all of these in the same dish, but usually one or two of those add-ons.
The Chajang Myun was much better at a resto because they would give you more sauce and fresh vegetables, not the freeze-dried veggies you get in the packaged version. Of course I am glad to have the packaged version when I have no alternative.
I developed a taste for those noodles and I still buy them, my favorite packaged versions of these 2 are from "Nong Shim" from Korea. They are available at SM and Ayala, and also in U.S. asian groceries. American ramen is so thin and mostly bland, I would only use it as a side course (maybe with a sandwich).

I also enjoyed the thick korean home-made noodles: Kal Guk Soo in soup. Warmed me up on those cold winter days. Not sure where you can find these here in Cebu. Ate at Han Gang Korean Restaurant in Mactan a couple of weeks ago and they didn't have it on their menu (they had a thinner, non home-made noodle). BTW, their beef bulgogi was delicious.
