• Let’s Talk Coffee


      An afternoon talking about coffee and coffee experience is something that will keep you wide awake aside from the caffeine effect that the coffee gave that afternoon.

      Carlostito “Tito” Gothong of Fujinoya gave the lowdown on the basics of understanding coffee, from the different kinds of roast to the different ways of enjoying coffee.

      According to Tito, here in the Philippines, we enjoy four varieties of coffee - Arabica, Robusta, Iberica, and Excelsa. The most commonly heard among the four are Arabica and Robusta.


      In Fujinoya, they use beans coming from Common Man Coffee Roasters because of the quality and the variety of origins that they can get. Fujinoya uses beans from 8 different origins, all coming from Common Man Coffee Roasters.


      Espresso, Latté, and Cappuccino

      Coffee was served in 6 different ways which resulted to different coffee experiences and mind blowing difference in taste and flavors.

      First cup was a latte. A latte is hot espresso with steamed milk, usually topped with foamed milk. The thickness of the foam is important. It protects the drinker from getting burned while at the same time it helps retain the heat of the coffee.

      Cappuccino came next which is espresso with hot milk and steamed foam. The difference between a cappuccino and a latté is that it is prepared which less steamed milk. The foam of the cappuccino exceeds the height of the cup and is traditionally served in a porcelain cup while a latte only has a little foam on top.

      The third cup was an espresso, a caramel-colored liquid topped with a thin layer of foam that can support a spoonful of sugar for a few seconds before breaking.


      The fourth one was from a pour over method using a kalita which is also known as drip or filtered coffee.


      The fifth coffee came from an aeropress method using a coffee press called aerobie which is also known as vacuum coffee.

      The last cup was called a cold brew, which used a Hario cold brew bottle. Cold brew is called as such because the coffee grounds is steeped in water at cold or room temperature for a minimum of 8 hours to a maximum of 12 hours or overnight. This kind of coffee has a higher caffeine content compared to the rest because of the prolonged soaking time of the grounds which results to a coffee concentrate. The cold-brewed coffee is sweeter in flavour and this can be kept up to a week inside the refrigerator.

      After all those cups, it leaves you wondering which cup tastes better and which one you prefer the most.

      At the end of the day, it is the coffee experience that matters.
